Hi everyone!
Today, I’ll be making two loaf pans of Zucchini Bread. I thank Joe and his lovely wife Denise for sharing the recipe with us. Joe doesn’t bake, but he often brings a lot of delicious goodies made by Denise to our workplace. This is one of my favorites, and I’m so excited to learn how to bake it.
Zucchini Bread

Ingredients:
- 3 eggs
- 2 cups sugar
- 1 cup vegetable oil
- 1 tsp. vanilla
- 2 cups grated zucchini (with skin)
- 2 cups flour
- 2 tsp. baking soda
- 1/4 tsp. baking powder
- 1 tsp. salt
- 1 tsp. cinnamon
- 1 cup walnuts (optional)
Instructions:
- Blend together eggs, sugar, vegetable oil, and vanilla.
- Add 2 cups of grated zucchini.
- Blend in flour, baking soda, baking powder, salt, cinnamon, and walnuts.
- Grease and flour 2 loaf pans.
- Bake at 350 degrees for one hour.
My hubby volunteered to grate the zucchini while I prepared all the other ingredients. He seemed amused that I’m serious about learning how to bake and he’s been very supportive. Plus, he loves baked treats and is happy to be the first to try whatever I make.
I’m glad that the zucchini bread turned out really good. Mmmm… perfect with a cup of tea or coffee!

Zucchini bread is one of those great ways of utilizing vegetables in a “stealth” recipe that is yummy to kids that hate veggies. I love zucchini bread a little more than I love banana bread.

So true, it’s a great way to utilize vegetables and make a yummy treat. I love zucchini bread! Although, you just gave me an idea for another post. I also like banana bread ….. so I guess I’ll be looking for a great recipe for that too. Thanks so much Alice for visiting my page:)

Never be afraid to try new recipes, and make it your own by adding something to it as well, that’s how I bake.. always experimenting. It’s fun to do that ! I grew up baking, and cooking so it comes easy for me. But the more you do it the more comfortable you’ll get!!!

Thanks for the tips Denise. My hubby is so happy that I’m learning how to bake. I’ll continue with this culinary journey, and hopefully get more comfortable experimenting someday. By the way, I love the Bakers Joy spray. It made things a lot easier:)

You’re welcome. It’s the little advice/suggestions that make your adventure easier and less stressful. I used to use crisco and flour but now I only use that Bakers Joy. And use parchment paper too. Even on the bottom of loaf pans- spray right over it. Helps the breads come right out! Cut the paper to fit inside the pans. Even use it when making cookies. Nothing sticks to it. The best bakers helper ever!!!

Yum…but I wonder if you could use nut flours instead? Will have to find a keto version.

I love zucchini bread. I also love trying different recipes for it. I will definitely be giving this one a try as soon as I can get more zucchini.
